Favorite Vegan Thanksgiving Recipes from MFS - Michael's Stuffing

This Thanksgiving stuffing recipe from MFS volunteer Michaeal also uses his "Copycat Bell's Seasoning."

Ingredients for Copycat Bell’s seasoning

  • 4 1/2 tsp dried rosemary
  • 4 tsp dried oregano
  • 4 tsp dried sage
  • 1 tsp ground dried ginger
  • 3 tsp dried marjoram
  • 3 tsp dried thyme
  • 1 tsp ground black pepper


  • Mix all ingredients together and grind to a fine powder in a coffee or spice grinder. Makes about 1/2 cup of spice mix.

Ingredients for Stuffing

  • 2 pounds of russet potatoes boiled
  • 4 sticks of celery chopped
  • 2 sticks vegan butter
  • 2 onions chopped
  • 1 quart vegan vegetable broth
  • Eight 1-inch-thick slices whole grain bread cubed
  • One package Gardein crumbles
  • 1 tsp salt
  • 1 to 3 tsp of copycat spice blend or to taste.


  1. In a large skillet, fry the onions in the vegan butter until they are brown. Add the potatoes and mash until the potatoes are creamy.
  2. Add the rest of the ingredients and mash until fully combined.
  3. Taste and adjust for seasoning. Place into a casserole dish and bake for 25 minutes. Serve warm.
