Laura’s Amazing Pumpkin Pie


  • 1 3/4 cups cashews: soak in water for at least 1-2 hours prior to making; you can also soak overnight; drain out water prior to using
  • 1 can organic pumpkin pie mix (recommended: Farmer’s Market brand)
  • 1 cup organic maple syrup
  • 1 pie crust
  • Optional: a few dashes of pumpkin pie spice


  1. Blend all ingredients until smooth
  2. Pour into pie crust
  3. Bake for 60 minutes at 375 degrees
  4. Let cool in the fridge for three hours
  5. Top with non-dairy whip cream!
