Vegan Eggnog Sugar Cookies

Ingredients for cookies

  • 2/3 cup sugar
  • 1 cup vegan margarine, softened
  • Egg replacer for the equivalent of 1 egg
  • 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 2 tsp vanilla
  • 2 1/4 cups flour

Ingredients for glaze

  • 1 cup powdered sugar
  • 1/2 cup vegan margarine, softened
  • 2 tbsp water
  • 1/4 tsp rum extract

Directions

  1. Combine sugar, margarine, egg replacer, salt, spices, and vanilla with an electric beater on medium until light and fluffy, about 2-3 minutes.
  2. Add flour and beat on low for another 2-3 minutes.
  3. Put dough fridge for 30-45 minutes.
  4. Preheat oven to 350°F.
  5. Roll out dough and cut into desired shapes.
  6. Cook for 6-8 minutes.
  7. Stir together all ingredients for the glaze and pour over cookies.
